The COOP grocery chain, said to be one of the largest in Europe, has begun selling insect-based foods in its Switzerland stores. This did not happen easily. According to this story from The Local, the Swiss government changed food regulations to permit the sale of insect-based products in May 2017, but then the COOP chain and their production partner were unable to obtain enough mealworms to start production.
That problem has been resolved and the products (shown above) are now in stores. According to this story from Grub Street, the problem was not lack of bugs but lack of bugs that had passed the Swiss approval process. They eventually sourced a supply from Belgium.
