Last time I made pancakes, this time with a few tweaks we’re able to make muffins! These are a great base for any type of muffin you wish to make, as you could add any fruit you think will work.
240g of GlycoGenesis
1 cup (250ml) milk of your choice (I used soy milk)
1/2 tsp lemon juice
1/2 tsp baking powder
1 Tbsp sugar (optional)
Fillings & toppings of your choice (optional)
Preheat the oven to 200°c/180°c Fan oven/gas mark 6. Place 6 muffin cups in a muffin tray or grease the muffin tray so they can be easily removed after baking.
Mix the milk/milk substitute in a bowl with the lemon juice, in a seperate bowl mix the GlycoGenesis with the baking powder and sugar if including. I suggest mixing well to remove any clumps the Glyco may still have from the bag.
Add the dry ingredients to the wet ingredients and mix until just combined, then add any…
